Gli Oliveti e il Frantonio dell’Abbazia

La tenuta di Montelabate coltiva in collina oltre 40 ettari di oliveto ad una quota compresa tra i 350 e i 500 m slm.. Le varietà sono quelle tipiche umvre: Frantoio, Moraiolo, Leccino, Dolce Agogia ed altre. L’azienda raccoglie le olive meccanicamente dal venti ottovre alla fine di novembre, secondo la varietà, e le lavora a freddo nel proprio frantoio entro pochissime ore garantendo la produzione di un olio extra vergine di ottima qualità.

 

The property of Montelavate grows olive trees over more than 40 hectares (about 99 acres) on the hills, at a height comprised between 350 and  500 meters above sea level. The olive cultivars grown here are the typically Umbrian ones: Frantoio, Moraiolo, Leccino, Dolce Agogia and others.


Depending on he specific variery, the olives are mechanically harvested between the second half of October and the end of November. Then, within very few hours, the olives undergo a cold processing in the Abbey’s own oil mill, thus assuring the cration of an high-qulity extra-virgin olive oil.

La tecnologia estrattiva a due fasi integrale (senza aggiunta di acqua alla pasta di olive) prmtte di mantenere intatte le caratteristiche dell’olio salvaguardando sia i polifenoli che i profumi.Infatti si ha una connotazione fesca, verde e d aromatica che si rispecchia nella fase gustativa, dove ad un ingresso dolce segue una sensazione diamaro e piccane molto equilivrata e che denota una ricchezza in antiossidanti (polifenoli, steroli, tocoferoli) utili pe la salute. 

Thanks to tho-phases integral extraction technology (avoiding water addition to the olive paste) the oil characteristics are unaltered, thus preserving both the polyphenols and the flavours.
As a result we obtain a fresh trait, green and aromatic, expressed in the taste, characterized by an initial sweet perception, followed by a really balanced bitter-peppery sensation indicating plenty of antioxidant elements (polyphenols, sterols etc.) good for the health.
